Ingredients

2 grated Zucchinis Green/Yellow

1/2 cup all-purpose flour

1 tbsp coriander seeds

4-5 black pepper kernels

1 tbsp cumin seeds

½ tbsp chili powder

4-5 tbsp oil

2-3 tbsp semolina

Salt to taste

Method:

Take a bowl and add grated zucchini in it.

Add salt and keep it aside for 10 minutes. The salt draws the excess water out of the zucchini.

Take a mortar and pestle. Crush coriander seeds, black pepper kernels, and cumin seeds. Keep this spice mix aside.

Take the grated zucchini and squeeze the excess water from it with both the hands as much as you can.

Now, add all-purpose flour, the spice mix, salt, and red chili powder in this mixture. Stir the mixture until well-combined.

Heat a large flat pan on a medium-high heat and add 2 tbsp oil in it.

Add the zucchini fritter mixture to that pan with the help of a scooper or a spoon and slightly flatten out the top. Sprinkle some semolina on the top.

Saute both the sides for about 4-5 minutes until golden brown. Add more oil if needed.

Zucchini fritters are ready!

Serve hot with plum chutney or vegan mayonnaise.

Notes:

You can add more vegetables like carrot, capsicum, cabbage, onions, or spring onions as per your taste.

If you don’t like semolina, you can skip that step.
