Ingredients:

1 cup boiled pumpkin

1 cup boiled pasta

2 cups any Vegan Milk (Coconut/Cashew/Almond/Oats/Peanuts)

2 tbsp all-purpose flour

2 tbsp olive oil

3-4 tbsp oregano seasoning

2 pieces of jalapeno

2-3 olives

2-3 tbsp lemon juice

Salt to taste

Method:

Blend boiled pumpkin, olives, and jalapenos together and keep aside.

Add oil in a pan. Add flour in it when warm. Keep the heat at low and toast the flour until it changes color.

Now, add oregano seasoning and salt.

Start adding milk in portions and keep stirring. The mixture will turn creamy.

Now, add the blended mixture of pumpkin, olives, and jalapenos.

Mix it well and add lemon juice.

Give it a boil and adjust consistency as per you like.

Vegan cheese is ready.

Now, add boiled pasta in it. Mix well.

Garnish it by chilly flakes. You can also garnish it with olive pieces and jalapenos.

Vegan Mac & Cheese is ready to serve.

Notes:

You can also add sautéed vegetables like mushrooms, capsicum, carrot, cherry tomatoes, and baby corns.

While boiling pasta, add some oil and salt in the water.
