1. Pumpkin Spice Hot Sauce

Ingredients:

1 cup boiled pumpkin

2 tbsp all-purpose flour

2 tbsp oil

1 cup any plant-based milk

2-3 tbsp oregano seasoning

2 tbsp lemon juice

1 tbsp vinegar

3-4 tbsp tomato sauce

2 dried red chilies

3-4 jalapenos

½ tbsp sugar

Salt to taste

Method:

Add oil in a pan.

Add all-purpose flour and roast until it changes color.

Slowly add plant-based milk and keep stirring to make it lump-free.

Add salt, vinegar, sugar, and oregano seasoning. Stir for 1-2 minutes on medium flame and this milk and flour syrup will start thickening.

Now, add boiled pumpkin in a blender with dried red chilies, lemon juice, and jalapenos. Blend to make a smooth paste.

Add this paste to the milk and flour syrup and mix it nicely.

Add tomato sauce and bring it to a boil.

Adjust consistency as per your choice by adding water.

Cool it down. Keep it in refrigerator for 1-2 hours. Garnish it with some mint leaves.

Your Pumpkin Spice Hot Sauce is ready to serve. It tastes amazing with Zucchini Fritters and Potato Wedges. You can even have it with Burgers and Sandwiches.

Notes:

You can also add olives for taste.

2. Pear Chutney

Ingredients:

6 pears - diced

A handful of raisins

3 tbsp jaggery

1 tbsp black salt

½ tbsp roasted cumin seeds powder

1/2-inch ginger – sliced

A pinch of cinnamon powder

½ tbsp chili powder

Salt to taste

Method:

Add diced pears, raisins, and sliced ginger in a pan with a dash of water and cook on a low flame until they become soft and mushy.

Add jaggery, black salt, roasted cumin seeds powder, salt, and chili powder.

Cover the pan and cook for another couple of minutes so that ingredients merge with each other nicely.

The mixture will start becoming syrupy.

Now, off the flame and cool the mixture.

Add it in a blender with cinnamon powder and blend coarsely.

Transfer it in a bowl and garnish with mint leaves.

Delicious and super easy pear chutney is ready to serve!

Notes:

You can also add some mint leaves if you like the flavor.

3. Super Spicy Salsa Dip without Onion Garlic

Ingredients:

4 medium size tomatoes – without cutting

1 tomato – finely diced in small pieces

Some coriander leaves- finely chopped

Some coriander leaves- no need to chop

1 green chili

2 tbsp oregano seasoning

½ tbsp chili flakes

½ tbsp roasted cumin seeds powder

¼ tbsp of black pepper powder

½ tbsp lemon juice

Salt to taste

Method:

Take a pan and dry roast the tomatoes and green chili at a low flame. Keep flipping them so that they get roast from every side.

After 10-15 minutes, the peel of the tomatoes will start coming out.

Take them out and remove the peel.

Blend them coarsely along with coriander leaves, oregano seasoning, chili flakes, black pepper powder, lemon juice, and salt.

Now, transfer it in a bowl and add chopped tomato and coriander leaves in it.

Mix it nicely. Garnish with coriander leaves.

Super spicy and delicious salsa dip is ready to serve.

It goes perfect with nachos, French fries, zucchini fritters, nuggets, and potato wedges.

Notes:

You can add chopped green chilies also if you like spicier flavor.

4. Sweet & Spicy Pineapple Chutney

Ingredients:

1 pineapple- nicely chopped

2 tbsp sugar

1 tbsp salt

½ tbsp black salt

¼ tbsp black pepper powder

½ tbsp roasted cumin seeds powder

½ tbsp vinegar or lemon juice

1 tbsp chili flakes

2 tbsp oregano seasoning

Method:

Add a dash of water and chopped pineapple in a pan. Cook at a low flame until pineapple becomes soft and mushy.

Now, add vinegar or lemon juice, salt, black salt, sugar, black pepper powder, roasted cumin seeds powder, chili flakes, and oregano seasoning.

Mix well and cover the pan. Cook for another couple of minutes at low flame.

The mixture will start becoming syrupy.

Transfer it in a bowl and let it cool.

Blend the mixture in a blender and then sieve it.

Refrigerate for an hour and garnish with mint leaves.

Sweet and spicy delicious Pineapple Chutney is ready to serve!

Notes:

You can also add honey or jaggery in place of sugar if you like the taste.
